Miss Ten just returned from four days of school camp and came home filled with countless stories, life-long memories, and a newly discovered enthusiasm for cooking.


fluffy_pancakes_8x10She's never been overly interested in cooking - or at least never through to completion.  I fear this may be a result of my being too controlling and over-bearing.  You know the type: watching like a hawk when handling knives, losing patience when she's taking too long to do something, and generally just getting frustrated with each other.

Having failed to be the perfect home-maker mother bestowing skills and knowledge upon my offspring, I had given up luring her into the kitchen and have patiently waited for her to show an interest.

So when she came home from camp, desperate to get into the kitchen and show my what she learned, I embraced the opportunity to open a new chapter.

This required me to make the conscious decision to keep my Type A personality in check and to merely facilitate rather than control the experience.  I think that all in all, I did a pretty good job.

We took Satine's recipe as she remembered it, tweaked it a little by substituting gluten-free self-raising flour and adding vanilla extract, and I stepped back, helping only when requested.

The result?  A proud girl, a proud mama and a pile of delicious, fluffy, gluten-free pancakes.
