We all have at least one friend who epitomises Martha Stewart.  You know the type: she cooks, she bakes, she sews, she crafts, she's involved with school and extra curricular activities, her house is spotless, her family cared for, she may even undertake paid employment, and she still finds time to blog about it along the way.

Hubby and I both love Mexican food - bursting with flavour, colourful, naughty yet nutritious, and fun to eat.  Best of all, it's easy to prepare and even fussy Miss Eight enjoys it!

An oxymoron?  Perhaps, but not as contradictory as the likes of vegetarian bacon!  I have chosen a gluten-free diet simply because I have noted a positive correlation between the consumption of gluten and my stomach blowing up like a balloon inevitably followed by a migraine.  The fact that going gluten-free appears to be yet another trendy regime to assist weightloss never entered into consideration.   Furthermore, I certainly don't lose sleep worrying about the cruel conditions baked goods suffer during their creation, packaging and storage before they pass my lips.

I may have lived in this country for almost three decades, but I am yet to acquire the love of the Kiwi classic takeaways of Fish and Chips.  To be honest, I will never salivate at the thought of greasy, chunky fries accompanied by batter engulfed fish dripping with fat, devoured from a paper parcel whilst sitting on a beach.

Could there possibly be a more perfect combination than chocolate, berries and cream?  Aside from chips and dip that is... and bacon and eggs... oh, and how could I forget chicken, cranberry and brie??  Okay, so there are numerous out-of-this-world flavour sensations and when it comes to cakes and desserts, chocolate, berries and cream are a guaranteed winning combination.

I have always enjoyed cooking and some of my fondest memories involve the preparation or enjoyment of food.  (The same cannot be said for the cleaning of dishes however - or the scrubbing of ovens for that matter!)

As a small child I would sit on the kitchen bench issuing Apuci (my father) with instructions for as long as his patience lasted.  As I grew older he attempted to impart some of his culinary skills upon me - yet another test of his patience - arming me with the 'basics' and setting the foundations to try new recipes.
